Suji ka halwa is the favorite everyday North Indian sweet made with fine semolina, or the cream made of wheat (farina), sugar, ghee, and nuts and flavored with cardamom. It's popular in Maharashtra. popular sweet in Maharashtra and is called as Sheera. Semolina is known as suji, sooji or Rava. This simple Halwa recipe that melts in your mouth takes just 15 minutes. The recipe I'm sharing is a family recipe which we've cooked for many years during celebrations with family members holiday celebrations, special occasions and special occasions.

Suji Halwa can also be called Rava Sheera and Rava Sheera from Western India and Rava Kesari in South India. The recipe is usually the same but with some ingredients changing from one place to another.

Although semolina or rava is the most important ingredient. In certain variants, there is milk substituted in place of water. This is often referred to"milk kesari. To enhance the flavor, cardamom powder is usually added.

The halwa can also be made to commemorate an occasion of auspiciousness or to celebrate a pooja. It could also be used for an occasion like Diwali, Ganesh Chaturthi or any religious event that is held at your home or just to indulge in something sweet. It also can be used as a fantastic breakfast alternative or dessert following dinner.

Since this is an easy and quick recipe for halwa, you don't have any excuse or reason to cook this dish. I make sooji halwa regularly to use it as a bhog or an naivedyam to offer to the gods.

We make Suji Halwa in addition to puri to celebrate the Navami ceremony that is part of Navratri Festival. Kala chana is also prepared. On this day, we offer the kala chana suji halwa along with puri to the little girls (kanjak) who represent the Mother Goddess.

The rava-kesari which can be found popularin South India typically comes with synthetic orange coloring to it. You can however create similar rava kesari with natural coloring agents such as threads of saffron and saffron powder.

Sooji Halwa Proportions

Sooji Halwa is typically manufactured in bulk during holidays or religious celebrations. If you need to make a substantial amount and would like to make a large quantity it is a specific proportion you have to stick to.

The ratio of suji to water in relation to Ghee equals 1:1:2:0.5 in the glass or cup amount. I slightly differ from this ratio and add an amount of Ghee, but with less sugar.

  • Sugar For 1 cup of sooji (or the rava) I would recommend adding 2/3 or 3/4 cup of sugar. This means that the suji Halwa isn't as sweet or it is not as sweet. A cup sugar makes a very sweet flavor.
  • Ghee I also add 2/3 cup of ghee per cups of suji. For me, 2/3 cup is a good amount of Ghee. Reduce or up the amount of ghee depending on your taste.
  • Water In this recipe, I've added 2.5 cups water for one Cup of Suji. But, you can add 2 cups of water. The amount of water you use may be increased depending on its quality and if you want the consistency of a pudding.

The ratio of suji with water Ghee can be found to be 1:1:2:0.5 in the measurement of a glass or cup. I slightly deviate from this proportion and use less ghee and sugar.

  • Sugar For 1 cup of sooji I would recommend adding 2/3 or 3/4 cups sugar. Thus, the suji Halwa has less sweetness or is more sweet. 1 cup of sugar has a super sweet flavor.
  • Ghee I add 2/3 cup of ghee per cup of suji. For me, 2/3 cup is an adequate amount of Ghee. Increase or reduce the amount of ghee according to what you like.
  • water I have added 2.5 cups of water to the one Cup of Suji. You could include 2 cups of liquid. The quantity of water you use can be increased depending on the quality of the rava as should you prefer the consistency of a pudding.
