Suji ka halwa is a classiceveryday delightful North Indian sweet made with fine semolina or the cream from wheat (farina) sugar, ghee and nuts and flavored with cardamom powder. In Maharashtra the state of Maharashtra, this sweet is called as Sheera. Semolina is also known suji, sooji, or the word rava. This delicious halwa recipe melts in the mouth can be prepared in around 15 minutes. The recipe I present is a recipe from our family which we've been cooking for a long time during family gatherings events, special occasions, and festivals.

Suji halwa is also known as Rava Sheera In Western India and Rava Kesari in South India. The recipe is more or less similar, with a few ingredients that are different between the two.

While semolina or rava remain the most important ingredient. In certain variations, milk is added instead of water and is known as milk kesari. To flavor the drink, usually cardamom powder is added.

The halwa is also prepared to mark an occasion of auspiciousness or for a pooja celebration. It could also be a special occasion such as Diwali, Ganesh Chaturthi or the religious celebration that takes place in your home or you need to indulge in something sweet. It can also be used as breakfast for the morning or dessert after a meal.

Because this is a simple and quick recipe for halwa, there is no excuse or reason to cook it. I frequently make sooji halwa to serve as a bhog or an naivedyam to be offered to the gods.

We always make Suji Halwa, puri and halwa during the Navami celebration in the Navratri festival. Kala chana is also prepared. On this day we offer kala chana, suji Halwa and puri to the tiny girls (kanjak) that represent the Mother Goddess.

The rava Kesari that can be found popularin South India, usually has orange synthetic color added. But you can make the same, with natural coloring agents, such as the saffron threads, or saffron-colored powder.

Sooji Halwa Proportions

Sooji halwa recipe is often used in large quantities during festive or religious occasions. If you're planning to make a large amount of it, there's an exact proportion to adhere to.

The ratio of suji to sugar to water to ghee is 1:1:2:0.5 in the cup or glass measurement. I slightly deviate from the ratio and add a bit less ghee and sugar.

  • Sugar - For 1 cup of sooji I will add 2/3 to 3/4 cups sugar. So the suji halwa is sweeter or is sweet. One cup of sugar provides the taste of sweet.
  • Ghee - Add 2/3 cup ghee per cup of suji. For me 2/3 cup is a good amount of ghee. Cut down or add more amount of ghee depending on what you like.
  • Water I added 2.5 cups water for 1 Cup of Suji. You can also make 2 cups with water. The amount of water you add can also be increased depending on how good the flavor of the rava and in case you desire the consistency to be smooth and pudding-like.

The proportion of suji to sugar to water to Ghee is 1:1:2:0.5 in glasses or a cup. I have a slight deviation from this proportion and add a bit less ghee and sugar.

  • Sugar - For 1 cup of sooji or rava, I use 2/3 or 3/4 cups sugar. So the suji Halwa is less sweet or is just sweet. A cup sugar gives an extremely sweet taste.
  • Ghee I'll also include 2/3 cup of ghee per cup of suji. For me 2/3 cup is an adequate amount of Ghee. Cut down or add more ghee to your preference.
  • Water I have added 2.5 cups of water to 1 teaspoon of suji. It is possible to use 2 cups of liquid. The quantity of water may also be increased depending on how good the flavor of the rava, and in case you desire an pudding-like consistency.
